Fiesta Chicken, Crockpot Style

This was a super quick recipe that I will be making quite often from now on. We both loved it and it was so easy!

In the crockpot toss:

4 Chicken breasts
A rinsed can of black beans
2 cups of frozen corn
2 cups of salsa
1 teaspoon cumin (if desired)
1 teaspoon chili pepper (if desired)

Cook however long. I cooked this on high for 6 hours, of you could put it on low for 8-10 hours.

Serve over hot rice and sprinkle with shredded cheese.

Now that's my kind of cooking!

Mmmm, this sounds yummy! And it doesn't have milk add in to it! I am going to have to try this, thanks for posting it!

I stumbled onto your blog from Kelly Tyson "Sophapilla"s blog. This recipe looks great! I'll have to try it. I love ANYTHING that you can throw together and leave it cook on its own! Thanks!
